Enchilada's.

Another recipe post because I'm the best chef there ever was ever, that was a joke for all of you who didn't get it! But the other day mum asked all us kids if we could cook 10 meals and i was like yeah probably I'm pretty sure i could! It was coz of some thing she heard or read about like uni students not knowing what to eat and all that but yeah man i can cook for daaaays! I've cooked this twice and everyone in the fam seems to like it and i always have to go find the recipe but It's gonna be right here from now on, but here is the source from where i gaaaat eet. I also made this for mum on Mothers Day :D wife me raaaight up!

Ingredients:
  
         10 small soft flour tortillas
         3 tablespoons flour
         2 cups chicken broth
         1 cup sour cream
         2 1/2 cups shredded and cooked chicken- I use boiled chicken coz like I like the way how it “shreds”
         3 cups cheese
         3 tablespoons butter
        

Directions:

Preheat oven to 180 degrees
Combine shredded chicken and 1 cup of cheese
Fill tortillas with the mixture above and roll each one then place in a greased 9×13 pan
Melt butter in a pan over medium heat
Stir flour into butter and whisk for 1 minute over heat.
Add broth and whisk together. Cook over heat until it’s thick and bubbles up
Take off heat and add in sour cream and chilies. (be careful it’s not too hot or the sour cream will curdle)
Pour mixture over enchiladas and add remaining cheese to top.
Bake in oven for 20-23 minutes then you will want to broil for 3 minutes to brown the cheese.
